“Fontefico the Pure Wine” of Abruzzo

The idyllically located Fontefico is on the Gulf of Vasto, the coast of Abruzzo. The winery was set up by two brothers, Nicola and Emanuele, in 1996, although it took a further 10 years of perfecting the art before they took the wine to the market. Fontefico is completely organic which makes the wines just that bit more delicious and special! The grapes are kept healthy by the sea breeze which blows through the vines keeping them dry which in turn stops parasites or diseases from affecting the crop. This is usually prevented by the use of chemicals. It is labelled as a boutique winery that produces exceptional wines and we can definitely vouch for that! They produce 5 wines, 1 white, 1 rose and 3 reds, each are very individual yet equally special. As the vines are located just a few hundred metres above sea level, they produce vigorous and highly flavoursome wines characterised by their high acidity and the deep fruit flavour. The white is of the local Pecorino variety, “Pecorino Superiore” has been classed as a DOC* Superiore one of very few Pecorino’s to be awarded with this prestigious label. Molto Belle Bologna

As we drove from the UK down to the luxury Italian Villas in Abruzzo, we made sure to plan our stops so that we could take in some of the interesting and beautiful destinations along our route. A particular favourite of ours was Bologna. It is an absolute must for all of you real foodies! Everywhere we turned there was fresh food and beautiful architecture. We mostly stayed within the Quadrilatero Area, famed for its markets. There are so many amazing shops with fantastic displays of fresh pasta, fish, vegetables and much more. It is also home to some of the most expensive balsamic vinegar that you can come across. It was treated almost like a fine wine with some bottles worth over €100! You really get the sense of life within the city with the hustle and bustle through out the traditional old cobbled streets. A Little Bit of Heaven with a Chocolate Fondant

Here is our recipe to make a delicious chocolate fondant. It is advisable to always make a spare so that you can test them whilst cooking to make sure that they are ready to serve, I am sure it wont go to waste! We use 150ml ramekins (medium-large size) to get ours oozing in the middle! Prep Time 30mins plus cooling time Cooking Time 10-12mins Serves 9 Ingredients; To Coat the Ramekins; 50g melted butter Cocoa powder For the Chocolate Fondant Mix; 200g good-quality dark chocolate 200g unsalted butter 200g golden caster sugar 4 eggs & 4 egg yolks 200g plain flour Method; With the melted butter brush the inside of the ramekins (in an upwards motion), allow the butter to set then repeat the process. Then generously dust with cocoa powder tapping out the excess. Put the ramekins into the fridge until required. Add chopped chocolate and butter to a heat proof bowl and place over a sauce pan of simmering water. It is important to ensure the bowl does not touch the water below. The Perfect Pork Belly

Here is a delicious recipe to warm you up in this cold and wintery weather! You will notice the overall time required is very high however the preparation is very short and straight forward. This recipe requires precise and low temperatures (although variance won’t harm, don’t worry!), being cooked using this method means the meat will remain both tender and moist. We brine the pork belly for 12hours, overnight, to improve the flavour and texture of the meat, to ensure that the dish is delicious! Prep Time 30mins Brining the Meat 12hrs Cooking Time 8hrs 30mins Serves 6 Ingredients; 1KG Pork Belly For the Brine; 2ltr Cold Water 250g Salt 1 Staranise 3tsp Coriander Seeds 3 Juniper Berries 1 Orange Zested 1 Lemon Zested 1 Sprig of Rosemary 2 Sprigs of Thyme 2 Garlic Cloves 3 Bay Leaves For the Braising Liquid; 1 Carrot peeled and chopped 1 Onion peeled and chopped 1 Leek cleaned and sliced 0.5ltr Chicken Stock Method; Remove the skin from the meat of the pork belly in one piece being careful not to pierce the skin (using a very sharp knife).
